Blueberries have many health benefits!
To begin with, catechins (a type of natural antioxidant), which are found in blueberries can activate fat burning genes in abdominal fat cells to assist yogis with weight loss and abdominal fat loss to boot. Blueberries also contain natural phytonutrients (plant nutrients) which protect parts of the brain from certain environmental toxins. Blueberries are rich in other phytonutrients that decrease free radicals in the body- which can be linked to aging and disease. Lastly, but certainly not least, blueberries are filled with vitamins C, E, riboflavin, niacin and folate.
So when planning the next breakfast menu, why not give these delicious blueberry scones a try?
Ingredients:
2 cups Spelt flour
1 TBS baking powder
½ tsp salt
1/3 cup coconut oil
1/3 cup agave
1 TBS vanilla
¼ cup hot water
1 cup fresh blueberries
Instructions:
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
In a medium bowl, place the flour, baking powder and the salt. Whisk together. Add the oil, agave, vanilla and mix together until a thick slightly dry batter is formed. Pour the hot water into the batter and mix. Gently fold in the fresh blueberries.
Use about 1/3 of a cup of batter per each scone. Bake for 20 minutes. Remove from the oven and let the scones stand for about 15 minutes to cool.
