Coconut Ceviche

What is ceviche? Traditionally, ceviche is a seafood dish popular in the coastal regions of the Americas. It is typically made from fresh raw fish cured in citrus juices, such as lemon or lime, spiced with ají or chili peppers and then garnished and served as an appetizer.

Today, the recipes for ceviche have come a long way. Next time you want to jazz up your favorite meal, try this delicious coconut ceviche as an appetizer or as the main entrée.

Ingredients:

3 young coconuts with soft meat (if the coconut meat is hard it won’t work well to make ceviche)

juice of one lemon

juice of one lime

2 regular sized heirloom tomatoes, diced

1/4 of a medium red onion, diced

2 tbsp chopped cilantro

½ tsp salt (to taste)

1 avocado, cubed

Instructions:

Scoop the coconut meat out of shells and rinse well (keep coconut water for drinking). Cut in thin slices and toss in citrus juices. Mix in the tomatoes, onion, cilantro and salt, then cover and chill till serving time.

Just before serving toss in avocado.

Ceviche is usually served as salsa with corn chips, but feel free to use this in any way you wish!
