Although the dog days of summer are winding down and coming to a close, the sultry heat is still lingering – especially during mid-day. It can be a bit unforgiving at times, but luckily for us there are tons of tricks that can help us during these intense heat waves.
Ayurvedically speaking, when things get a bit heated, we will want to gravitate toward cooling things that bring us right back into balance. Think in terms of both food as well as activities – perhaps drinking some cool coconut water before taking a refreshing dip into the ocean or taking a gentle yoga class followed by a mid-day meal of gazpacho.
Gazpacho, a delicious type of raw soup that’s just perfect for summer, originated in Spain and has traveled far and wide to tantalize our taste buds in the thick of soaring summer temps. INGREDIENTS
- 2 cups green peas (shelled fresh or thaw out frozen peas)
- 1 avocado
- ½ cup coconut water
- 1 cup coconut milk
- 1½ teaspoons sea salt
- 1 tablespoon fresh basil
- 1 teaspoon black pepper
- 1 lemon, juiced
- Garnish
- dash of paprika
- 1 tablespoon fresh basil
- drizzle of extra virgin olive oil
INSTRUCTIONS
- Add all the ingredients into the blender and process until creamy.
- Garnish with fresh basil, paprika and olive oil and serve.
