Happy Fall, y’all! It’s time to say goodbye to those long summer days as the Equinox today marks the beginning of autumn in the northern hemisphere. Thinking of Fall always makes me giddy with excitement – the crisp air, the leaves changing colors and the coziness of it all. Here in Wilmington though, the temperatures are still quite high, which makes it hard to get into soup-making mode. So what’s a beach bum to do? Three words – Pumpkin Pie Smoothie. All the delicious flavors and textures of Fall without the heat.

Ingredients:
½ cup pumpkin puree
1 cup coconut or almond milk
1 large, over-ripe frozen banana
1 tbsp. almond butter
2-3 medjool dates (pitted)
1 tsp. pumpkin pie spice
Directions:
Throw it all into the blender and blend until smooth and creamy
Pour into your favorite container and enjoy with spoon or (glass) straw
