It seems everywhere you turn there is more information about additives, preservatives, GMO’s, and other harmful ingredients lurking in our food. Couple that with our increasingly busy schedules, it makes for a challenging predicament to eat healthy in a flash.
Here’s an easy, minimal ingredient, vegan, gluten-free recipe for those moments when you are in a pinch or have a craving for a quick, healthy dinner.
Ingredients: Serves 4 people
2 Organic Apples (any kind you like based on your preference) finely chopped
½ Head of chopped Organic Purple Cabbage
4 cups of Organic Kale
1 ½ cups of Quinoa
1 Tablespoon of Coconut Oil
Sea Salt
Instructions:
Bring quinoa and water to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork.
In a separate pan on medium heat, place the diced apples and coconut oil into the pan. Wait 2-3 minutes, saute the chopped purple cabbage and kale in with the apples until tender.
Salt to taste.
Mix the quinoa, apples, cabbage, and kale in a bowl.
Serve and enjoy!
