It’s just been a chocolate kind of week in my house. These muffins have been made 2 or 3 times. Once for my son’s soccer class, once for a private cooking class and now just for my family. (They are over the moon!) They are super easy to whip up anytime and healthy as can be! Let us know what you think!
[h2]Vegan Chocolate Muffins[/h2]
Ingredients
1 cup unsweetened applesauce
1 tsp. coconut oil
1/2 cup agave
1.5 tsp. vanilla
3/4 cup white whole wheat flour (King Arthur brand)
1/3 cup unsweetened cocoa powder
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 cup grain sweetened chocolate chips
Instructions
Preheat oven to 350.
Place paper liners in muffin pan.
Combine all ingredients together in a bowl. Spoon batter into muffin tins. Bake for 20-22 minutes. Muffins are done when tops are firm.
Cool slightly. Indulge!
